HORSERADISH OXYMEL

The oxymel - from the Latin oxymeli meaning ‘acid & honey’ is an ancient Greek drink made from herb vinegar & honey. Traditionally, an Oxymel recipe would have been used to administer beneficial herbs that might not be so pleasant to take on their own.


Fresh horseradish root peeled and chopped

Cinnamon sticks, dried elderberries and rosehips (optional)

Apple cider vinegar

Raw honey

Fill a wide neck jar with horseradish and optional extras

Cover with apple cider vinegar


Leave to infuse in a cool place, shaking from time to time, for a month

Strain infused vinegar into a clean jar

To each 450ml of vinegar stir in 150ml honey


Take a tablespoon a day in warm water when your immune system needs support
